Put it at 250 for about 4 hours then the last 30 min cranked it to 325. Wrapped it in heavy foil and a towel for maybe 20 min. No spritz, I did fill the pan in the smoker with beef broth for moisture.Hey LK, your smoked corned beef looks fantastic. You indicated you smoked until an internal temp of 195 was reached. What was your chamber temp, how long did it smoke, did you spritz periodically and wrap in butcher's paper during?
Just curious whether you treated it like a pork butt or is it handled differently since it's been brined?
