Grilled Greek Chicken
Ingredients:
• 4 chicken breasts (boneless, 6oz each)
• 1⁄2 cup black olives
• 4 diced tomatoes
• 1 cup crumbled low-fat Feta cheese
• 1⁄3 cup olive oil
• 1 tsp garlic
• 1 tsp rosemary
• 1 tsp thyme
• 1 tsp oregano
• 2 juiced lemons
• black pepper
Directions:
1. In a bowl, mix the olive oil, garlic, rosemary, thyme, oregano, pepper and lemon juice.
2. Cut up chicken pieces into strips. Place the chicken pieces, olives and diced tomato in the mixture, cover and marinate in the refrigerator 8 hours or overnight
3. Place chicken mixture in aluminum foil, create pocket, add some of the marinade to keep moist and cook for approximately 30 minutes at 350°F.
4. Sprinkle with feta cheese before serving
