SRV could pick a 12 string, he has my vote. Zappa as well.

http://www.youtube.com/watch?v=r6cplMM3d_Q for shone

SRV , has always been my favorite, for the fact his damn guitars had .10guage strings and 11's some times, altered saddles and bass frets as well.

9's are easy to bend but 10's and 11's will tear the tips of our fingers off. And he palyed with crazy speed with that size string to.

Clean channel and crazy authority in his playing .

Never seen a better version of Voodoo child than this one http://www.youtube.com/watch?v=ffcQwYGk3Kg

Definitely a big Tommy E fan, bad ass acoustic player.

Zakk is probably my favorite metal player.

Ohh Van Halen takes this. But i really dont think there is a best.. I think any very good guitarist can do what any other guitarist can do.

Was just getting ready to post the link to couple of the El Macambo vids when I saw ur post Shine. Would have been a helluva show to be at - small venue and Stevie was tearing that shit up. If I could pick a guitarist to play like, it'd be Stevie Ray.... Like others have mentioned, technique and speed is admirable and shit but without soul, passion, feeling etc.. it's just noise to me.

A fav - Pride and Joy

Just to mix things up a little.... Prince actually gets some critics nods for being one of the, if not the, best guitarists ever. Never really thought of him till I read an article somewhere and he was mentioned so I checked some links to solo's by him. Say what u want to about the little weirdo - He CAN play the guitar like a mofo. Clip below he starts doing his thing at about the 3 min mark.
While my Guitar Gently Weeps w/Tom Petty and company.....
