Hey Steve, how did I miss this thread ?!
It's actually pretty easy once you have been eating vegetarian/vegan for a while, I'm not sure of my macros but I don't really think I am falling too short anywhere.
Some of the common foods I eat most days would be:
Sushi/inari
Oats
Pea or rice protein isolate (for my shakes)
Heaps of salads, veges & fruits
Rice/quinoa
TVP (textured vegetable protein)
Legumes & lentils
Chickpeas
My diet is actually pretty varied and not at all boring...
Black lentil & kidney bean curry with avocado
Vege sushi
Potato, fenugreek and avocado
Tofu, steamed veges & rice
