I have been doing a lot of pork lately. Its a cheap protein and I can buy whole rotisserie chicken for $4.99 at HEB so it makes no sense to bother smoking it for me. I did 2 - 7lb boneless shoulders this weekend with the Chupacabra rub. Works out great for me. I make a giant baked potato on my high days and add about a pound of meat and some ranch made with olive oil and its soooo good. Today is a low carb day so I got a plain broccoli and kale thing with a pound of meat, some kidney beans and corn and some feta with kalamata olives, boiled eggs, and some Caesar made with olive oil. After my sickness I really cleaned up my diet and have been staying away from processed anything as much as I can.

I do a rotisserie chicken from Sams club ever weeks for my lunch. It is the cheapest chicken one can get and tastes good too.
I love pork butts and shoulders but they are so fatty. Loaded baked potatoes are a fav at my house for sure. A pound? Do you have some special toilet for giant dumps?
I do pork loins, much leaner but you have to doctor them up. I normally butterfly them and make a tomato/jalapeno relish with avocado oil. Place it inside the loin, roll it up and pin it with toothpicks. then smoke. Its good.
Feta and kalamata olives makes salad great. I just use olive oil with salt and pepper and maybe a touch of vinegar for dressing.
