Quads and hams are done on different days in my training.
Me too. And compound leg movements such as full range barbell / machine / hack squats and leg presses work the hams very hard anyway. I typically do 8-10 sets of leg curls on hammie / cankle day, but I'm convinced my "quad" workout of the four exercises I mentioned in my last sentence work my hammies harder than the leg curls do.
I rarely do leg extensions, and when I do it's usually just a couple of sets thrown in at the end of the occasional quad workout for fun. I don't think they're necessary or particularly beneficial to anyone not competing and getting down to a dehydrated 5% bodyfat. And some believe them to actually be dangerous to the knees.
