so, I found this idea from a local nutrition guys facebook..tried it and loved it
steam cauliflower and drain off water...run through the food processor (or just mash with the old fashioned masher like me) with either a little bit of fat free or reduced fat butter (their idea) or I used 1tbsp of nonfat greek yogurt (plain of course) in 1 c. of cauliflower to make it creamier...salt and pepper to your liking and voila...tasty low carb sub for mashed potatoes.
Went exceptionally well with my extra lean ground turkey breast stuffed pepper
