Ive been smoking mine for 4-6 hours lately and finishing them in the oven at 250-275 until about 200 degrees internal temp pulls apart real nice. Have done more than one with the bone in the middle. Not sure if that will help might be worth a try. Food looks delish tho good deal.I know not to get that cut again, bone in the middle of the shoulder, didn't pull apart nicely, came off in chunks and I had to chop it.
