I bake a lot of stuffed chicken breasts. Best method is digital thermometers, I pull them when they hit 150 and will rest and rise to 165 optimal temp internal temp in 15 min for chicken in a porcelain cooking pan. Works with most cooking methods, figure in rest cooking time and how much more the temp rises until 165. You'll have perfect tender chicken every time. I use multiple probs (4 -5) then choose the two with the lowest temps and use them to make sure everything is fully cooked.
