I did up an entire venison front leg. Seared it up on the grill for 10 min each side, wrapped it in foil and placed it in the oven at 200° for 8 hrs. It really came out great. I never had any luck with a rub on big game so I forgo it with whole meat.
Dogs got the bones with a little meat on them..... God their asses stink.
