I was actually at car meets both mornings over the weekend. Been really nice getting out. It is fun getting up early with my son and hanging out all day. He is going to start a little insta page to document all our meets. The kid is a car nut and it is something fun we can do together. I didnt post pics of the car, but I will take any opportunity I can to show off my meat!

Not much really 'new' so figured I would drop in to say I am still kicking. Funny thing, I think I got into the habit of not eating enough for too long. Going 2 years on IF dieting. I managed to diet off probably 7-10 GOOD lbs. I realized I needed to up my food a few months back and I filled right back out. Kinda weird, like our bodies will find their 'set point'. Not as lean as I would like to be right now, but I had no choice but to up the food for a bit.

We did have leftovers, but you might have to fight my daughter for the ribs. I caught her last night eating the COLD out of the fridge. With two teenage kids and this fuked up COVID, our house and our days just dont feel 'normal'. Getting the kids all excited to sit down for a dinner and they all love it, is worth the effort.
@Lizard King , I am new to 'smoking' and still figuring out how to do it in the brick oven though a combination of flu dampening and the door on the oven. What is the thought behind the bacon on the top of the ribs.
I only had about 2:45 to cook ribs. I kept the temp around 220. Taste was AWESOME and I had good smoke penetration, but they were not totally 'fall off the bone'. My buddy who smokes all the time, said he does the initial smoke for a couple hours and then wraps in foil and lets them slow cook another 2 hours. Any good tips?
