Looking for Jerky Recipes

I just got a pound of spicy venison and a pound of teryiaki peppered london broil jerky, would love to make my own, but want to make sure it is not salty as all shit.
Post up some recipes and how you cook them. Also the cut of meat if it matters to the type of jerky and if you have substituted meats and the outcome.

For meat, I prefer flank, cut it across the grain in thin strips. For recipes I use a basic salt and pepper or a blackening seasoning. You can do it in the oven on 175 or in a dehydrator if you have one of those. I have done london broil but, it was very tough. I found flank to be the best, pulls apart easily and absorbs the flavors very well.

That almost qualifies as a recipe. How long do you cook it for, how much salt/pepper?

2 kg flank steak cut into strips. 2 teaspoons of the following - Chilli powder, salt, white pepper, cayenne pepper,onion powder..Rub into meat for 2 minutes or so then into a bowl add 1/4 cup low sodium soy sauce 1/4 cup peri peri sauce (choose the hotness you like for me it's Nando's black sauce) 1/4 Worcester sauce (you can up this to 1/2 a cup if looks too dry) leave in the fridge covered for 12 hours. Then put strips onto baking sheet (cookie sheet is ideal) have oven pre-heated at 150f then cook for 6 hours turning after 3. (Timing is appox and will depend on the meat, your oven etc but its doe when the meat is dried out.

Oh yeah ask your butcher to trim all fat off the flank. This is a very lean meat anyway but you want all fat trimmed.

A lot of work but well, well worth the effort. You could double the portions and make some more.

A type of hot sauce but any hot sauce will do.

When I want to jerky I just use a good porn and jergins...

Salt and pepper to taste, I dont measure it out. Or like the poster above you can do a wet marinade. But typical cook time is 4 to 6 hrs depending on how dry/ moist you like it.
