Fluffy light protein pancakes!

Gave these a shot and they are delicious, will give macros for ingredients listed but if you try and sub different fat, sweeteners make sure to account for it.
1/4 or 1/2 batch would fill me for breakfast :)

1cup cottage cheese(used fat free)
3/4cup eggwhites
1tsp vanilla
2packets stevia( may subsititute other sweeteners about 2tbs worth)
1/2 cup dry oats(ground in food processor or blender)
1tsp baking powder
1/tsp salt

Mix dry ingredients in small bowl

Whisk wet ingredients
Stir dry into wet until just mixed

Cook about 2mins/side on a nonstick griddle at med-high heat

Serve with toppings of choice

** can leave out vanilla and sweetener to go a savory route.

Sounds great. One question. I have made pancakes before but always run into the same problem. They are fluffy when I first cook them but as the cool they go flat. Do these stay fluffy?
