This is my new favorite they call for short ribs but just use a roast of any kind. Cut into pieces and load it in your deep pan for oven or pressure cooker if you have one. Then add
4lbs beef large cubes
Stalk of lemon grass cut in large pieces (it was $2 at chinese market)
4 or 5 Fresh Garlic Pieces
One stalk green onion - only white pieces
one cup low sodium (or reg) soy
one cup water
1/2 cup rice wine vinegar
half cup splenda
take the peal off of one orange and discard orange
pealed ginger (a couple cubes)
crushed red peppers one tablespoon or I added 1/2 cup Asian low carb hot sauce (like saraicha without sugar though)
cook till beef shreds and if you ear carbs put in on rice if not its awesome in lettuce wraps. REMEMBER once you shred don't throw away sauce its the best part. When you shred it cover the meat with the sauce after straining it and taking out all the stuff that is no good to eat.
Cut green onions over it and try not to eat the whole thing and no drinking the sauce lol.
I added a marrow bone for a little extra fat I had a SUPER lean roast.
