Good idea M-Rods! I was just thinking about how I could get the Brussel Sprouts down. Never been a fan. ;)

Then again, is eating them whole part of what makes this process work?

I hope not, growing up I wouldn't eat my Mom's veggie soup unles she blended it.

I roast brussel sprouts in the oven at 400 for 20 - 25 minutes on a baking sheet. Toss them in olive oil, salt pepper and fresh garlic and they are awesome.

I make cauliflower mashed potatoes also. You steam the cauliflower till it is falling apart, mix in some I can't beleieve it's not butter light and then some mashed potatos flakes, just enough to thicken it up a little. Pretty freaking good and almost all cauliflower.

Thanks! I'm not exactly Rachel Ray, so I need pretty specific information before attempting a new recipe. :D

For the brussel sprouts: after baking. spray lightly with those low/no-calorie salad vinigarette sprays. Try adding the broccoli to an eggwhite omlette, makes for a nice texture. Cauliflower is awesome just steamed with some garlic powder
