Low carb ( but not low fat) zucchini brownies...I had an urge for brownies but am too close to the show to risk a real one...so I put together this recipe from some standard ones and substituted flaxmeal in because it's just awesome...and if you have or are prepping for a contest, you have probably needed some flax in your diet to keep you regular LOL...
These were a tad dry at first, but get better every day LOL..and yes, I have managed to eat 2 a day...and plan to make more because they are so good.
350 oven for about 20 minutes for the mini muffin pan, add 8-10 for a 8x8 pan
1/4c flaxmeal
1/4c oil (I use olive, but flax or coconut would be good)
3/4c whole wheat flour
3/4c splenda
1/4c cocoa...could do more it would be better
3/4tsp baking soda
1/2 tsp sea salt
1 tsp vanilla
1c shredded zucchini
Mix all until moistened and bake til done...20 min was plenty for the mini muffins.
Could sub no sugar applesauce for the oil and should make them more moist
..
