I just learned how to do Viper Presses with a log.

You take a log, get it up on your lap, clench the log to your chest, then stand up and press all in a single motion. The goal is to press the log as you stand up so you don't have to press it at the end.

Because you are pressing as you stand up you will need to use a smaller weight than traditional log clean and press, at least until you work back up to the heavy weights!

So . . . . is that just considered an assistance exercise for Strongman, or is it an officially recognized lift that might appear in a meet to the exclusion of the clean and press?

It is allowed. It is a variation of clean and press.
As long as it isn't stated in the pre comp rules meeting it is allowed .

Coincidence, I've been researching strongman this week and seen the term several times. Now I know what it is.

Are you allowed to "jerk" the weigh overhead? I used to watch Misha K. do it all the time. It's a lot easier to jerk the weight than to press it.

Yes you are pretty much allowed to do anything other than rest it in your head. A log is a bit harder to jerk though.
