Anyone have a good recipe that doesn't involve deep frying them? Just picked about 20 jumbo peppers from my garden and I usually throw them on the grill with chicken or steak, but in the mood to try something different.

Mix cheddar cheese and cream cheese together, fry some bacon til crispy and chop up fine, mix all that together and stuff those peppers with the mix, then grill and feast.

You can add a packet of ranch seasoning to the cheese mix, also, and that works great. This mix works great inside a breaded, halved chicken breast pinned down with water-logged toothpicks also.

Some people also toss a packet of Italian dressing seasoning instead of the ranch...

Man, I'm glad food is on the way. This got me hungry.

i would do cream cheese but use cotija instead of cheddar. and there'd be minced green onion and nothing that comes from a powder pack. just fresh ingredients. mince some garlic as well. and of course fresh cilantro.

thats my steez.

Hey LK, when you grill them, what exactly do you do? I haven't done this before, but I do lots of other veggies on the grill. I'm thinking I need to try this, I bet they're awesome!

I usually just throw them on the top rack of the grill whole on low heat. Give you a nice burn with whatever you are eating.

For a lighter option maybe ground beef 90/10 stuff peppers with a dipping sauce like queso.

It'll be a little dry...just depends on how much of a fatty you are willing to be. I use 93/7 beef and seasoning with some provolone/mozzarella blend and its fine. Add a little marinara and its perfect.
