This is a great one for anyone trying to bulk up. The key here is choosing the right beer to match the flavor your looking for. I almost always use Newcastle or Dos Equis Amber for this one. But, occasionally I'll use a lager, usually Dos Equis.

Btw, cooking meat in an oven in a standard pan can be made much more tasty by filling the pan half or quarter of the way with beer. For beef, stick to darker amber colored beers to bring out the flavor and for chicken and pork (mmm, carnitas) use a lighter, lager-style beer.

On to the recipe....

Ingredients

1 large onion sliced
8 medium potatoes quartered
1 1/2 to 2 1/2 pounds round steak cut in 6 to 8 serving-size pieces
1 tablespoon brown sugar
1/4 teaspoon ground nutmeg
1/4 teaspoon ground black pepper
1 envelope beefy onion soup mix (Lipton's is the best IMO)
1 can (12 ounces) beer
1/2 teaspoon salt or to taste

Preparation

Combine sliced onion and potatoes in bottom of crockpot. Arrange steak over vegetables. Combine brown sugar, nutmeg, onion soup mix; sprinkle over the beef. Pour beer over all. Cover and cook on LOW for 8 to 10 hours, until beef is tender. Taste and add salt to taste.

* I've also added diced jalapenos to this dish before to spice things up and it turned out very nice!

How do you think sirloin tips would work for this? Just got 5 or 6 roasts for around $1.50 a lb. Now I don't know what to do with them...

Should work just fine, as long as they are not very thin. Thin steak you risk overcooking it.
