No Bake, Low Carb Peanut Butter Pie
This thing is stupid simple and really helps with sweet tooth cravings after dinner while sticking with a low carb diet.
4 ingredients:
8oz cream cheese
1c natural peanut butter
1c Cool Whip or lower carb, store-brand equivalent
Block of Semi-Sweet Milk Chocolate
1. Let cream cheese sit outside of fridge to soften
2. get big mixing bowl and mix softened cream cheese with 1cup peanut butter
3. fold in whipped topping, add Stevia to taste
4. put a piece of parchment paper in an 8x8 glass dish, dump and smooth the mixture into dish and let cool for 1 hour in the fridge
5. take out, cut into squares, plate square, apply a dollop of whipped topping and liberally shave some chocolate on top.
6. eat.
Make sure to be cool with the amount of chocolate you put on there.
I used bittersweet chocolate chips and grated them on the whipped cream - 2 chips equal 1g of carbs. I used almost 1 whole chip.
I also used Peter Pan creamy peanut butter instead of natural peanut butter and didn't include the Stevia - it's just 4g of carbs per 2tbsp and made it much sweeter without tasting too artificial.
