Was a beautiful weekend, Lit up a Fuentes Grand Reserve 858, smoked some chicken thighs, ox tails, sweet potatoes and regular potatoes. Used my combo of cherry and apple woods. I can't tell you how awesome the smoke flavor in the potatoes was, cooked them for 2.5 hours at 250 - 275. The sweet potatoes were like a creamy sweet potato pie in the middle, the russet potatoes were just amazing.

Any interest in cold smoking? Cheeses and fish, bacon, etc.

What do you mean by cold smoking?
62-86 degrees. It doesn’t actually cook the food. Like bacon is cured, then cold smoked. Then you cook it.

The smoke box has to be away from the fire source (no direct heat). Good thing to do in wintertime.

I could do that on my dehydrator but there would be no smoke.

Absolutely. And this year the games won't all be over by halftime! My Brownies look like they'll be competitive this year. Just the idea of playing for a playoff slot is exciting for us north coast folks.

Looks fantastic LK!

I gave up my smoker awhile back as I don't really have the time for it anymore but did smoke a few turkeys and chickens over the years. Good eating, enjoy!
