Looking good after about 5 hours at 250 degrees. Been using Apple and Cherry wood mixture. Rubbed it down with yellow mustard and pork belly dry rub, wrapped it in plastic for a day.

Looks good. What was the internal temp? When do we get to see it sliced?

I pulled it off at 180, let it sit for 90 minutes, I think it could have cooked a little longer as the big meaty pieces were a little tough to pull apart. Came right off the bone though and tasted great. You could taste the brown sugar/apple vinegar basting. Ate it with some nice Cole slaw.

It's hard to be patient sometimes, but I like to cook mine until the internal temperature is 195, and then let it sit for about an hour before pulling apart. Of course, most of the time I'm lucky to make it to 190, and then the impatience kicks in and I pull it apart about 30 minutes later...LOL...

Damn near my EXACT standpoint. 195 is perfect but I get anxious and waiting while it rests is impossible
