Not sure why I was in the mood for these today, wish I had pickled beets or radishes like my guy in NYC, but these came out pretty damn good!
I used a waffle iron to reduce the fat from frying. I tried the first one with Pam, it was ok, next one I brushed the waffle iron with vegetable oil, MUCH better.
2 cans of chick peas, rinsed and I let them dry in the colendar.
2/3 cup of Vegetable oil
4 tablespoons of flour
1 large onion
2 tsp baking powder
handful of chopped fresh parsley
handful of chopped fresh cilantro
2 tsp Kosher salt
2 tsp cumin
1 tsp coriander
1 tsp cayenne pepper (more or less depending on your spice level)
4 egg whites
4 large garlic cloves (I added more, LK likes garlic!)
Threw all that in the Vitamix and got it into a nice puree, you can use a food processor, I don't have one.
I put about 3 - 4 wooden spoons into the hot waffle Iron, let it cook about 9 - 10 min
I had pita bread, tzatziki, garlic hummus. Shredded some lettuce, nice fresh tomato, cucumber and red onion (now you see why I wish I had pickled beets!)
Shoved all that into a 1/2 pita with 2 waffle triangles and threw it down.
Makes about 5 full waffles.
Will report on the extent of my chick pea gas pretty soon....
