Keto pancakes that don't suck

    Wife made these tonight and they were great. Only thing we would do different is add some vanilla and a dash of cinnamon.

    Almond Flour Pancakes - Gluten Free
    A nice fluffy gluten free pancake made from almond meal. These low carb pancakes are perfect served with butter and sugar free pancake syrup.

    • 2 cups almond flour
    • 4 eggs
    • 1/2 cup water (for puffier pancakes you can use sparkling water)
    • 1/4 cup oil
    • 1 teaspoons baking soda use baking powder if you prefer
    • 1/2 teaspoon salt
    • 3-4 packets stevia
    1. Mix ingredients together in a blender.
    2. Let batter sit for about 15 minutes.
    3. Pour onto hot griddle or pan over medium high heat (about 325-350 degree F).
    4. Flip them when the edges start to dry.

    Makes about 24 small silver dollar pancakes (we got about 6 the size of a slice of bread)

    We made regular pancakes for the kiddos but they wanted to try ours and they even liked them. They'll stick to the traditional bisquick and suggary syrup for a while though. These monsters burn more than anyone could ever consume

    Thanks for sharing this. The last one I tried was gross. Felt like I was eating sandpaper. Lol.

    I'll definitely try these when I get back home. I've been meaning to find a low-carb recipe.
