Just made some yummy protein waffles!

I was in the mood for waffles, and needed some pre w/o carbs so, I threw some stuff in the blender, and they were fabulous!

2 eggs
2 scoops vanilla whey
1 packet splenda
1 tbsp vanilla extract
1 tsp baking powder
1/3 c quick oats
1/4 c almonds
1/3 c whole wheat flour
2/3 c milk

Blend until smooth

pour into waffle iron, and cook :D
I ate mine dry, but hubby topped his with sugar free syrup. they were delish!

nutritional info:
TOTALS:
fat: 27
Carbs: 65
Protein: 63 (however, the vanilla whey that I used is lower in protein than most...this could easier have been higher, but I'm trying to use up the nasty vanilla we bought at the vitamin shoppe.)

for 6 waffles per waffle:
fat: 4.5
carbs: 10.8
protein: 10.5

How was the 1 tbsp vanilla extract? too much or just right?

DC and I make these all the time and they're awesome! My suggestion is to add 2-3 Tbs Olive oil or Macadamia nut oil to the mix so they don't get too dry.

We almost always have some in the fridge and our kiddo loves them too. Although, she eats a BB'er diet anyway because she's awesome. lol

Do they reheat well if you make a large batch, freeze and maybe throw one in the toaster?
