I never brine a brisket. I love to BBQ and grill. Looks good but let us see a slice! That is the magic the bark is just part. Been BBQing since the early 90s. almost never do it the same way chasing that perfect cook.

I've never brined a brisket, I've rubbed it the night before but never a brine. What would you suggest?
here's my fave

1/3 cup Salt and pepper mix (4salt/1 pepper I use black and mix a big batch, it won't go bad)

1T Fresh oregano, very roughly chopped

1/4 cup Dry oregano

8oz cherry juice bottled (not maraschino)

2 oranges, cut into eighths

1 cups Olive oil

8 Cloves of garlic, crushed

6 cups water

If the liquid isn't enough add Water to cover

My favorite rub recipe. I'll use hickory for a hot smoke then reduce heat and let it ride

Guajillo rub

1 # guajillo peppers dried in oven then ground fine

5 cups salt

¼ cup ground black pepper

½ cup granulated garlic

1 cup sugar

½ cup ground cumin

¼ cup ground coriander

1 cup paprika

You can have that citrus rub, would be good on chicken but I am not letting it touch my beef A1.

That guajillo rub is awesome! You told me about it on WCBB. I did it on a tri tip then used the leftover to make a sauce. I have done it 2x as my fam LOVES IT

It is almost like you are a chef or such

Guajillos are so damn good!!! Good on everything.

Holy crap, you grind your own fresh guajillos? I just buy them dry in the bags:D They are everywhere out here in Cali:cool:

I am gonna try this rub recipe out, I like everything in it!

I bet this will be awesome for Tri Tip too!

The cherry juice I bet is awesome.

....and I like the Dr. Pepper idea too. I've seen a lot of people use it in pork shoulders, chicken, and a few in briskets.
