Right now, fish is on my meal plan for meal #2 of the day, which is right around lunch time for me. I've been baking it and taking it into the office, but i have to eat alone in the corner due to the odor. Flounder, Swai are the culprits as of now.

So I loaded up the smoker yesterday to cook up some smoked chicken breasts, and got some salmon for the hubs....and when i was at grocery store, they happen to have some Swai fillets in the seafood display area. They were thawed and pretty meaty guys. So I got 4 and thought hey, i'll try my hand at smoking these guys.
They were fab. I do think it was the cut of them. They held up, didn't break down and were in tact when i pulled them outta the smoker which was even better lol.
Now, I have gotten Swai fillets frozen before and thawed them. But they were small and thin. So would have to smoke them on the rack on some foil.
I put some small, thin flounder fillets on the rack in some foil too.
Also smoked some Barramundi (sp?).

I also smoked some whole onions and sweet potatoes that i stuck in there. Then cut up the onions to add to my meals.

Someone was just at my desk and commented on how it smells good. I may have found a way to mask that fish smell .... YAY! (jury still out so will be asking peeps all week lol).
(keep the fishy comments clean on here guys....LOL...well, that namely goes for FD....hahahha)

Smoked snapper+a good yellow curry+onion+shiitake+asparagus has been my go-to lately. Delicious and only minimally assaulting to the nose.

Do you warm it up or just eat it cold. If you warm it up, you are the office douche, if you eat it cold then tell them all to STFU!

One of my first jobs someone would nuke a can of salmon everyday for lunch, couldn't figure out who it was. Finally I staked out the lunch room and found out it was one of my employees, that smell stopped immediately, lol

I can't do fish. It doesn't matter matter what species, how it's cooked or what it's marinaded in.

As for smoking, yeah that's up my alley. I do beef, chicken and venison. One big mistake noobs do with smoking is not controlling the heat. You're smoking the meat, not cooking it. There are a few pre-packaged cures that you can use but I just buy the salt and make my own. Smoking meat is a love that can not be rushed. Marinaded for 2-3 days and smoke for a 1-2 hr on low heat.

I love fish, and getting the smoked versions is awesome. However, fish, no mater how it’s smoked, seasoned cooked, when you heat that sh*t up in the microwave, it’s gonna have some level of fish smell it will leave behind.

LOL... I remember years ago I left a opened can of tuna in a closed door office garbage can over the weekend and let’s just say it was the best smelling office after that. Lol

It's not just heating the fish that tells people in the office what you're having for lunch. They may learn a lot hours later, depending on what happens at the orifice.

Women complain about the smell more than men?
