I think you gotta start somewhere ut if you went to culinary school then you should have a least a minimal grasp of how your diet is shit. You can eat much cleaner and get away from the processed foods and eat much more because it is clean. You definitely should clean up the diet dude. I would recommend getting a test level as well no joke.

Having said that, motivation comes from results and desire and you have to have the wants in order. You have to want to be in shape more than you want a ginger snap, it is that simple. Clean up the diet and keep pushing forward. You don't have to take giant leaps but forward progress dictates change because when the initial shock wears off and your body realizes that you are working out and adapts, your progress will change with it. Eat more clean, Whole Foods and cut out anything processed and sugary and watch how well you do with it.

Searay and Para hit it on the head. Most of the time, I don't really adjust a new clients calorie intake as much as I adjust the foods they are eating. I have them create a log like yours for a few days then match their calories with clean whole foods. In almost every instance they start dropping bodyfat immediately.

Also, the desiccated beef thyroid is garbage. The same with the desiccated pig thyroid. It is better to treat thyroid with T3 and/or T4 directly in order to dial in the correct dose. Humans do not have the same ratio of T3/T4 as cows or pigs.

Looking at it on a log, I can obviously see plenty of shit to cut out in terms of the junk food aspect.

What are your thoughts on:

Canned tuna
Hard cheese (not the process cheese product shit, real cheese)
Boneless-skinless breasts
Grilled/baked chicken wings
Sirloin
93% ground beef

Are there other meats/proteins that you recommend instead of any/all of the above?

I can figure out the vegetable part more or less since there really aren't too many bad vegetables per se.

Just out of curiosity, have you ever heard anything about soy sauce? I know that soy in general is very estrogenic, but I've always wondered how much estrogen would be in something like soy sauce that is very denatured from its original state and where you're inherently going to be limited to a very small amount (a few tablespoons).

I have no problem with the cheese, but do not count it as a source of protein. I track it as a fat source. Get rid of the chicken wings. You always want the leanest cuts of meat and wings are far from it. Here are some other things you could add:

- White fish (Cod, flounder, pollock, tilapia, etc...)
- Salmon (only during bulking unless your fats for the rest of the day are really, really low)
- Eye of Round/Flank steak (much leaner than sirloin)
- 96/4 or 97/3 Ground beef or turkey (Drained and rinsed. Yes, I said rinsed. The amount of fat still on the meat is ridiculous, as you will see when you rinse it. A butcher's system for determining what is 97/3 and 85/15, "Yeah, that looks like 97/3 to me." Rinsing is a must if you are serious.)
- Pork tenderloin (actually leaner than you think)

My God I miss eating beef more than once a month ......
Me too! During contest prep I stick to chicken and fish, so for 20 weeks I had no red meat. Since the show, I have had red meat every meal. Haha.

Agree on the chicken wings. However, beef and especially turkey tastes like cardboard w/ that low fat levels. First, you have to eat fat to burn fat. I use the 85/15 ground turkey and when its cooked I leave the fat juice in the pan with the turkey and I can see the meat soaking up the 'gravy'. It tastes so much better and you do have to tolerate what you are eating. As far as the beef goes, I use 80/20, and drain the fat but I do not wash off the rest of the fat. Some fat is good especially as it will satiate you making it easier to stick to the meal plan.

You are right. I usually don't start rinsing until I am 8 weeks out from a show and every calorie starts to count. However, at that point I am usually on chicken and fish only. Beef is a treat.

For me its an iron and hematocreit issue ,, I eat beef a couple of times a week I start to look like I got a sunburn on my chest , If I keep eating it , I turn red like a blotchy lobster. Chicken n fish for me.

Yeah, my RBC/hemoglobin/HCT will skyrocket if I eat it every day. I am just making up for lost time. Although, IDGAF when the doctor says my hemoglobin and HCT is high. It is always high. Haha. But 17.1 and 54 is better than 20 and 58. I actually start to feel a little lethargic when it gets to 20 and 58.
