Ok, I didn't take any pics, but these are a favorite in the LK household
I filet a couple of chicken breasts, put between 2 layers of plastic wrap and beat them harder than Ike did Tina with a tenderizer. Make them thin enough to almost see through, but not too thin where you have holes in them.
I cut a mozzarella stick in half lengthwise and put it at the top of the chicken breast and start rolling it like a sushi roll, use plastic wrap to make them tight if needed.
Roll in flour, I season with some garlic powder and ancho chili powder
Dip in an egg bath, I use a mixture of egg and milk
Roll in seasoned Panko breadcrumbs
Place this nice gurthly tubesteaks (chicken) onto a cookie sheet that has been sprayed with Pam.
I cook these for about 25 min give or take at 425 then let cool for a few minutes before slicing like a sushi roll.
