Putting a pork shoulder in the smoker Sunday very early. Going to soak it in a brine of apple juice, brown sugar, kosher salt and some spices then do a dry rub. Going to do a mix of apple and cherry wood for the smoke.
Anyone have any apple juice bringing tips? Gonna mop it every hour or so.

Put about 4 cups of Apple juice, 1 cup of kosher salt, a few cups of water to be able to cover the pork shoulder. Cut up a lemon, blood orange and a mix of different pepper corns. Added a cup or so of brown sugar and have a 10lb shoulder soaking in it now. Will put in the smoker at 275ish with apple and cherry wood at 7am :)
