A few of my favorite recipes

Modify to better suit your diet. Some are very flexible.

Mexican style chicken

Place chicken breasts in a baking dish. Cut slits in to each one. Top with salsa, then a little lite sour cream. Sprinkle a little taco seasoning, then crush some tortilla corn chips on top. Cover with foil and Bake at 425 degrees for 22-25 mins. Remove from oven, top with low fat shredded Mexican cheese, then place back in oven for 5 more mins, or until cheese is melted.

Honey glazed chicken marinade

1 part Honey
1 Part Soy sauce
1/3 part Olive oil

Simply marinate for at least 2 hours, 4 hours is optimal, and then grill. The smell while grilling alone is heavenly!

Italian sausage and beans

1 lb pack of lean Italian sausage links-cut in to pieces
2 cans dark red beans
1 can Garlic and Basil deiced tomatoes
Half onion chopped (more if you like)

In pot, saute onion in a little olive oil until desired texture. Add in sausage pieces and cook until almost done. Drain beans and tomatoes, then put in with the sausage and onions. Heat until beans are warm.

Roasted Chicken Rub

1 tsp Salt
1 tsp black or seasoned pepper
1 tsp Dried Rosemary
1Tbs Olive oil

Pat dry the skin, and brush on Olive Oil. Season with dry ingredients. For more flavor, baste with butter half way through cooking.

Chicken and Fire Roasted peppers

Chicken Breasts
Roma Tomatoes
Fire Roasted Tomatoes
Goat Cheese
2 Garlic cloves
Chicken Broth
Chopped Asparagus optional

Mince Garlic and place in baking dish with 1 cup of chicken broth.

Cut slits in chicken breasts

Top with sliced Roma tomatoes, chopped peppers then optional asparagus. Bake covered at 425 degrees for 22-25 mins, top with goat cheese, then bake for another 5 mins.

Squash Spaghetti

Take a large butternut squash, and cut it in half long ways. Scoop out all of the seeds. Put in a baking dish, cut side down, and punch some holes in the top to let steam escape. Bake at 350 degrees for 30-40 mins. Remove, and before it becomes completely cooked, take a fork and scrape the flesh, and it should shred apart like spaghetti!! Healthy and very low calorie replacement for regular noodles, and tastes really good.

Low Calorie Pumpkin Cheesecake

15oz can of pure pumpkin
8oz Fat free cream cheese
2 whole eggs
6 egg whites
1/2 cup splenda
1 tbs pumpkin spice
1 tsp cinnamon

Hand mix Pumpkin, and softened cream cheese. Mix in eggs, then dry ingredients. Pour in to pie container.

Bake at 350 degrees for about 30 mins.

Entire pie is 732 cals, 13g fat, 64g carbs, 81g protein
