    Home made cottage cheese.

Just got this from someone and will try it out tomorrow. I can't find it over here so if anyone else has a recipe for cottage cheese post it up.

Heat some milk just below boiling, ordinary skimmed for low fat semi skimmed for a higher fat content etc, let it cool for a couple of minutes and then add lemon juice or white wine vinegar, that will seperate the whey from the curd. you bin the whey by straining it keep the curd and that is cottage cheese. Chop it up (the curd) It takes ten minutes to make and it freezes.

I've made that a couple times before... It's great of you have milk that is going to turn. You can add whatever kid of flavorings you like to the curds too. I go nuts straining it though. I leave it in a cheesecloth for a while with a weight on it to wring it out.

How does this taste in comparison to what you buy in the store? I bet raw milk would make awesome cottage cheese.

I sell it to high school kids and tell them it's better than nitro tech.

Just tried it and it worked. bloody hell whish I'd known before, over here cottage cheese is as rare as rocking horse shit.
Taste wise it was a little bland but I didn't add anything to it. Used half a lemon to seperate it about 3 mins after I took it off the heat.
