    egg whites to go

    I got sick of either having to wake up earlier to cook up my eggs, or try and squeeze it in at work. I should note I'm on a mission to seperate my fats from carbs and i don't appreciate egg whites plain and have been adding veggies to make up for it!


    Simple solution came to me and i got cooking

    I took 2 regular muffin pans and sprayed with a quick shot of Pam.

    Sliced up a couple bellpepper, i used red and orange(1 cup worth) , a yellow onion(1 cup as well), 2 jalapenos and 5 decent sized mushrooms.
    Divide equally into muffin tin,
    I then could fit 2 tbs egg whites per tin or 3 cups total, sprinkled 1 cup total fat free cheddar cheese equally

    Now bake at 350 for 15-20 mins and i now have yummy on the go eggwhites!

    They were simple to eat on way yo work, finger food, and tasted great, even still cold so figured id share

    thats a great way to go DC! thanks so much for sharing. i love my breakfast, it is the same every morning. part of the reason i get up at 4 is too make sure that i have the time for breakfast

    Also each one(each tin) has 28 calories, 1.4 g carbs , 5 g protein, and 0.05 g fat,


    4 made a decent breakfast with my oatmeal this a.m.

    I tried 3oclock for awhile that allowed me time for breakfast but I'm trying to adapt a more "normal" and natural schedule to get more sleep and recovery...

    So once it is cooked it is like a egg white/bell pepper muffin?....and you can just slam them down like you are eating a muffin?

    I have a keto recipe that is the same thing but with whole egg. bacon and a slice of tomato, the bacon holds perfect shae when done baking. I don't see a point in trying to separate macros though unless its near workout time.

    That's basically where I got the idea ... old recipe of cubed ham and cheese, scramble egg pour over and bake in mini-muffin tin for breakfast gatherings or brunch time potlucks.... used the concept to try and simplify my life...

    And seperating macros I know I know... but for me I'm less hungry throughout day... no science just experience

    For those of us who deal with hunger vs forcefeeding I prefer to chew my calories ... just personally and why I choose to prepare and eat them.

    I am doing the force feeding now LOL...But wondering if I couldnt just do it in a regular muffin pan? I am slamming down a half dozen boiled whites every day...kinda gets old after a while.....bet those freese well too....
